Pepperoni and Sausage Calzone!


I'm pretty sad I haven't posted a recipe all month long. I've failed my goal but I'm going to ignore that and continue from here on out. I'm sure this won't be the only time I do this but the month of June just gets real crazy with family birthdays, summer activities and our trip to Seattle, it was hard to plan out the week let alone a new recipe... So things slowed down this week and I was able to research some new recipes and I decided to try this one out. My husband and I love pizza and anything Italian, he's a big calzone fan, I like them but only if I get to decide what goes in them. I found this recipe and it seemed pretty easy it's a lot like making lasagna but instead you put the filling in a roll not on noodles. It was fun making these I will definitely make these again soon!

Ingredients
16 whole frozen, unrisen dinner rolls (I used Rhodes)
1 tablespoon butter
1 whole medium onion, diced
1 pound Italian sausage
1/2 tsp Italian seasoning
1/4 tsp red pepper flakes
15 ounce, whole milk ricotta cheese
1 1/2 cup grated mozzarella cheese
2 whole eggs
1/2 tsp salt
Black pepper to taste
2 tablespoons chopped fresh parsley
Marinara sauce, for serving
1 whole egg beaten

Instructions
Place frozen roll on a baking sheet to thaw. Cover with a towel and let thaw and rise for 2 - 3 hours.

Preheat oven to 400 degrees.

Melt butter in a large skiller over medium-high heat. Add onion and allow to cook for a couple of minutes. Add sausage and cook until brown. Add italian seasoning and red pepper flakes.

In a seperate bowl, combine ricotta, parmesan, mozzarrella, eggs, salt, pepper, and parsley. When sausage is cool, stir it in. Set aside.

When rolls are thawed and risen, roll them out on a lightly floured surface until paper thin. Spoon filling onto half of the dough circle. Fold half of the dough over itself then press to seal edges. (Mine popped open so make sure there is enough dough to cover the filling and seal it completely).

Brush surface of calzone with beaten egg then bake 10-13 minutes or until nice and golden brown. Serve with warm marinara sauce.



Grilled Corn Guacamole

Sorry no picture for this recipe but you can find it http://www.thepioneerwoman.com/. This recipe was really fun to make it took some time but I grilled the corn and chopped the ingredients before hand so all I had to do was add avocados. I was worried about this recipe only because I love just plain old guacamole and when people change it up I typically don't like it, but this is delicious the corn adds a little sweetness to the saltyness. I made this for our 4th of July pool party and everyone loved it!

Ingredients
3 ears Corn ( I bought the prepackage corn all ready to go)
6 whole Avocados, Diced
1 whole Large Tomato, diced
1/3 cup Onion, finely diced
3 diced Fresh Jalapeno
2 whole limes
Kosher salt to taste
Onion powder to taste
Pepper to taste
Garlic powder to taste

Instuctions
Grill corn until nice and golden, with good grill on marks. Allow to cool (I made it the night before). Then cut the kernels off the cobs, set aside.

Halve avocados and remove pit. Cut avocado into a dice inside the skin, then scoop out with a spoon.

In a bowl, combine corn kernels, diced avocados, diced tomato, jalapenos, lime juice, and seasonings. Stir gently to combine.

Our families are based around the dinner table we both came from families that love to get together and eat. Literally that's all we do, and amazing conversations come out of these dinners.
